Apple Refrigerator Pickles

For this pickled apple recipe, I was trying to come up with a way to use up a bunch of apples we had in our fridge. Eventually, I decided just to pickle them refrigerator-style. This is the result.

  1. 1 Place water, cider vinegar, sugar, allspice berries, cloves, nutmeg, and ginger into a small saucepan. Bring to a simmer over medium-high heat, stirring until sugar dissolves.
  2. 2 Meanwhile, toss apples with lemon juice in a large bowl and pack into 2 sterilized 1-quart canning jars with lids and rings.
  3. 3 Pour boiling sugar syrup over apples. Top with the lids and screw on the rings tightly. Allow the jars to stand at room temperature until cool.
  4. 4 Once cool, press the top of each lid with a finger, ensuring that the seal is tight (the lid does not move up or down at all). Place in the refrigerator and wait for at least 1 week before opening.
