  1. 1 Heat 2 quarts oil in a deep fryer to 375 degrees F (190 degrees C).
  2. 2 Sift flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt together onto a piece of waxed paper.
  3. 3 Beat eggs and sugars in a large bowl with an electric mixer on medium speed until fluffy. Beat in 2 tablespoons vegetable oil. Stir in flour mixture, alternately with milk, beginning and ending with flour mixture, until well blended. Stir in applesauce and vanilla until well blended.
  4. 4 Carefully drop batter by level tablespoons, 3 or 4 at a time, into hot oil; do not overcrowd the deep fryer or oil may overflow. Fry, turning once with tongs, until golden, about 3 minutes. Transfer to paper towels to drain. Cool completely before serving.
