Ingredients
3 slices bacon
1 tablespoon unsalted butter
3 cups corn kernels
0.5 cups bell pepper
0.33 cups red onion
1 jalapeno
0.5 teaspoons dried basil
salt and freshly ground black pepper

Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Pour out all but 1 tablespoon bacon fat.

Add butter to the skillet and allow to melt. Stir in corn, bell pepper, red onion, and jalapeño. Cook until corn is becoming tender but still slightly crisp, about 5 minutes. Season with dried basil, salt, and pepper and stir until well combined.

Crumble or chop bacon, and stir half into the corn mixture. Sprinkle the remainder over the top, garnish with fresh basil, and serve.
