  2. 2 Stir zucchini, apple, brown sugar, eggs, olive oil, and vanilla together in a large bowl until well combined.
  3. 3 Sift flours, cocoa powder, baking soda, salt, and baking powder together in a separate bowl; stir gently into zucchini-apple mixture until fully incorporated. Spoon batter into the prepared baking dish. Sprinkle chocolate chunks and pepitas over the top of batter.
