I made this creamy salad dressing for kale with my cousin Pam when I had kale coming out of my ears from the garden! We added red onion and some raisins for sweetness. It is delicious and tastes even better the next day.

Ingredients

4 cups chopped kale , ribs removed
0.25 cups chopped red onion
3 tablespoons raisins
0.5 cups plain Greek-style yogurt
0.25 cups mayonnaise
2 teaspoons sugar
1 lemon , zested and juiced
3 tablespoons sunflower seeds

Instructions

1 Mix kale, red onion, and raisins in a large bowl.
2 Whisk yogurt, mayonnaise, sugar, lemon zest, and lemon juice together in a bowl; pour over the kale mixture and toss to coat. Refrigerate 2 hours to overnight. Sprinkle sunflower seeds over the salad and toss to serve.
