4 cups apple cider
0.5 cups cider vinegar
2 tablespoons honey
2 tablespoons gochujang
4 teaspoons garlic
1 teaspoon sesame seeds
0.25 teaspoons crushed red pepper

Bring apple cider and cider vinegar to a boil in a large saucepan. Reduce heat to medium-low; simmer, uncovered, until slightly thickened and reduced to 1/2 cup, about 35 minutes, watching closely as it will thicken quickly towards the end of cooking time.

Transfer reduced cider mixture to a small saucepan. Whisk in honey, gochujang, garlic, sesame seeds, and if you like, crushed red pepper. Cook and stir over medium heat until honey dissolves, about 1 minute.

Remove from heat. Whisk in butter, cut into small pieces, until melted. Chill, covered, until ready to serve (or up to 3 days).
