  2. 2 Combine milk and vinegar in a small bowl until evenly blended. Stir whole wheat flour, all-purpose flour, oats, baking soda, ginger, baking powder, cinnamon, nutmeg, and salt together in a large bowl.
  3. 3 Whisk pumpkin, brown sugar, white sugar, vegetable oil, and egg together in a separate bowl; stir in milk mixture until smooth. Stir in flour mixture until just combined: fold in fresh and dried cranberries.

  5. 5 Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes. Cool in the tin for 5 minutes before removing to wire rack to cool completely.
