  1. 1 Preheat the oven to 350 degrees F (175 degrees C).
  2. 2 For the dough, combine butter, brown sugar, white sugar, eggs, molasses, and vanilla extract in a large bowl. Beat with an electric mixer until creamy.
  3. 3 Mix flour, cinnamon, baking soda, and salt together in a separate bowl. Stir into creamed butter mixture. Fold in oats and cinnamon chips until well combined.
  4. 4 Drop tablespoonfuls of dough onto ungreased baking sheets.
  5. 5 Bake in the preheated oven until edges start to brown, 10 to 12 minutes. Transfer to wire racks to cool.
  6. 6 For the filling, combine confectioners' sugar, butter, heavy cream, and vanilla extract in the bowl of a stand mixer. Beat on high speed until light and fluffy, 2 to 3 minutes.
  7. 7 Spread 1 teaspoon of cream filling over half cookies. Top with remaining cookies.
