This loaded broccoli casserole has all the classic flavors of a loaded baked potato - bacon, sour cream, and of course, lots of cheese!

  1. 1 Gather all ingredients.
  2. 2 Preheat oven to 350 degrees F (175 degrees C). Lightly coat a 2-quart baking dish with nonstick cooking spray.
  3. 3 Cook broccoli in a large pot of boiling, lightly salted water for 1 minute; drain. Rinse with cold water; drain again and set aside.
  4. 4 Cook bacon in a large skillet over medium until crisp. Using a slotted spoon, remove bacon to a paper towel lined plate. Crumble bacon when cool.
  5. 5 Add onion to the skillet with bacon drippings; cook over medium about 5 minutes or until tender.
  6. 6 Meanwhile, combine soup , sour cream, garlic powder, salt, and pepper in a large bowl.
  7. 7 Add broccoli, bacon, and cooked onions to the soup mixture and stir to combine. Add cheese, stir.
  8. 8 Transfer broccoli mixture to prepared baking dish.
  9. 9 Combine crushed crackers and melted butter in a small bowl. Sprinkle crumb mixture over casserole.
  10. 10 Bake 45 minutes or until bubbly and golden.
  11. 11 Serve hot and enjoy!
