This is the best banana nut-oatmeal bread I have ever made! So full of flavor. I double the recipe and give it out as gifts, and everyone seems to appreciate it.

  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  2. 2 Cream together shortening and sugar in a large bowl until light and fluffy. Stir in eggs one at a time, beating well with each addition, then stir in banana and vanilla.
  3. 3 Sift together flour, baking soda, and salt in a separate bowl. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
  4. 4 Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 50 to 55 minutes.
