My babysitter used to make these peanut butter cupcakes for us. We gobbled them down within 5 minutes!

  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
  2. 2 Combine flour, cream of tartar, baking soda, and salt in a bowl.
  3. 3 In a large bowl, beat brown sugar, peanut butter, and shortening until light and fluffy. Beat in eggs, one at a time, then stir in vanilla. Stir in dry ingredients alternately with milk. Spoon into the prepared muffin cups.
  4. 4 Bake in the preheated oven until the tops spring back when lightly pressed, 15 to 20 minutes. Cool in the pan for at least 10 minutes before removing to a wire rack to cool completely.
