  2. 2 Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  3. 3 Beat together sugar and butter in a large bowl with an electric mixer on low speed until combined. Increase speed to high and beat until light and fluffy, about 5 minutes.
  4. 4 Reduce speed to medium and beat in ricotta, eggs, and vanilla.
  5. 5 Reduce speed to low. Add flour, baking powder, and salt; beat until dough forms.
