My mother used to make this seven-minute frosting without cream of tartar as a base before making her marshmallow frosting on some of her cakes. This makes enough to fill and frost an 8- or 9-inch cake with two layers.

Ingredients

1.5 cups white sugar
0.33 cups cold water
2 eggs whites
1.5 teaspoons light corn syrup
1 teaspoon vanilla extract

Instructions

1 Beat sugar, water, egg whites, and corn syrup in the top of a double boiler over rapidly boiling water with an electric mixer until well combined. Continue to beat while it cooks until frosting stands in peaks when the beater is raised, about 7 minutes. Remove from the heat and mix in vanilla.
