  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt or tube pan.
  2. 2 Combine water and raisins in a saucepan over medium heat. Simmer until water is absorbed; set aside to cool.
  3. 3 Mix together applesauce, oil, eggs, liquid sweetener, and vanilla in a large bowl until well combined. Sift in flour, cinnamon, baking soda, nutmeg, and salt; stir until just combined. Mix in raisins and nuts. Pour batter into the prepared pan.
  4. 4 Bake in the preheated oven until a toothpick inserted into the center of cake comes out clean, about 1 hour.
