Applesauce Zucchini Bread

This is my first attempt at making zucchini bread with applesauce, and I must admit, it's a winner. I loved having a breakfast bread with my coffee. I had an extra loaf and took it to church to give to my ladies' group — they loved it, too!

  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Grease 2 loaf pans.
  2. 2 Combine flour, cinnamon, salt, baking soda, and baking powder in a large bowl. Set aside.
  3. 3 Combine sugar, oil, and eggs in another large bowl and mix until blended. Add zucchini, applesauce, and vanilla; stir until well combined. Mix in flour mixture until incorporated. Stir in pecans. Pour batter evenly into the prepared pans.
  4. 4 Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, about 1 hour. Let cool slightly before slicing.
