Mash sugar and margarine together in a large bowl until creamy. Beat in eggs until incorporated. Stir in flour mixture in three batches, alternating with mashed bananas, beating batter briefly after each addition; mix until smooth and well combined. Fold in plums and transfer to the prepared baking dish.
