1 tablespoon vegetable oil
1 small onion
, coarsely chopped
4 bonelesss pork chops
3 tablespoons maple syrup
3 tablespoons spicy brown mustard
4 cloves garlic
, minced, or more to taste
1 teaspoon red pepper

Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with oil.

Scatter onion evenly into the prepared baking dish; arrange pork chops on top of onion.

Stir maple syrup, mustard, garlic, red pepper, chili powder, and salt together in a small bowl; pour evenly over pork chops. Cover the baking dish with aluminum foil.

Bake in the preheated oven until chops are no longer pink in the center and an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), 25 to 30 minutes.
