This zucchini bread recipe is the best I have made. I have tried other recipes, but this remains the best. Thanks to my mother!

  1. 1 Gather the ingredients. Preheat the oven to 325 degrees F (165 degrees C). Grease and flour two 8x4-inch loaf pans.
  2. 2 Beat eggs in a large bowl until light and frothy. Add sugar and oil; mix until well combined. Stir in zucchini and vanilla.
  3. 3 Combine flour, nuts, cinnamon, salt, baking soda, and baking powder; stir into egg mixture until incorporated. Divide batter into the prepared pans.
  4. 4 Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, 60 to 70 minutes.
  5. 5 Slice and serve.
