  1. 1 Preheat the oven to 400 degrees F (200 degrees C). Line a 10x15-inch rimmed baking sheet with parchment paper.
  2. 2 Melt butter in a skillet over medium heat. Add onion and cook, stirring often, until golden brown and tender, about 10 minutes. Add apple and cook, stirring occasionally, until just beginning to soften, about 4 minutes. Stir in vinegar and cook 30 seconds more.
  3. 3 Arrange tart shells on prepared baking sheet. Cut Brie into 15 small pieces and put one piece into each shell. Evenly fill with apple mixture. Sprinkle with walnuts.
  4. 4 Bake in the preheated oven until cheese is melted and tart shells are golden, 12 to 15 minutes.
  5. 5 Meanwhile, stir together caramel sauce and thyme in a small bowl. Microwave until warmed, about 15 seconds. Drizzle tarts with caramel mixture and garnish with flaky salt.
