This candied acorn squash makes a delicious side dish. No longer than 15 minutes prep and cooking time. Buttery and sweet. A must-try that's almost as good as dessert!

Ingredients
1 acorn squash
, halved and seeded
4 tablespoons butter
4 tablespoons packed brown sugar
Instructions

Put squash halves, cut-side up, on a microwave-safe plate or dish. Place 2 tablespoons butter and 2 tablespoons brown sugar into the cavity of each half.

Cook in the microwave on full power until flesh is soft, 8 to 10 minutes. Rotate squash a couple of times to ensure even cooking.

Scoop out flesh along with sugar and butter and place into a medium bowl. Mash slightly to blend.

Serve in a bowl or in the squash shells.
