This cheesy sausage and potato breakfast casserole is a delicious crowd-pleaser for brunch. Can also be made the night before and refrigerated, then baked in the morning.

  1. 1 Preheat the oven to 450 degrees F (230 degrees C).
  2. 2 Prick potatoes several times with a fork and place onto a baking sheet.
  3. 3 Bake in the preheated oven until potatoes are soft, 50 to 60 minutes. Remove potatoes from the oven and let cool until safe to handle, at least 15 minutes.
  4. 4 Reduce oven temperature to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  5. 5 Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a medium bowl. Sauté onion in the same skillet until translucent, about 5 minutes. Transfer onion to cooked sausage in the bowl.
  6. 6 Add eggs, 1/2 of the Cheddar cheese, milk, salt, and pepper to sausage-onion mixture in the bowl. Mix until well combined.
  7. 7 Grate potatoes and add to egg mixture in the bowl. Stir until evenly incorporated, then pour into the prepared dish. Sprinkle remaining Cheddar cheese on top.
  8. 8 Bake in the preheated oven until heated through and cheese is melted and bubbly, about 35 minutes.
