  1. 1 Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  2. 2 Cream white sugar and shortening in a large bowl with an electric mixer until smooth. Beat in eggs one at a time, mixing well after each addition. Stir in pumpkin and vanilla until well blended. Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a separate bowl; stir into pumpkin mixture until well mixed. Stir in chocolate chips and nuts until evenly distributed. Drop dough by teaspoonfuls onto the prepared cookie sheets.
  3. 3 Bake in the preheated oven until the edges begin to brown, 12 to 15 minutes. Allow to cool for a few minutes on the baking sheets before removing cookies to wire racks to cool completely.
