Delicious, cakey, drop cookie. These chocolate chip pumpkin cookies are a family favorite and so easy to make.
Ingredients
- 2 cups white sugar
- 1 cup shortening
- 2 large eggs
- 1 can pumpkin puree , 15 ounce
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour
- 1.5 teaspoons baking soda
- 1.5 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 pinch ground nutmeg
- 1 cup semisweet chocolate chips
- 1 cup chopped walnuts , Optional

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

Cream white sugar and shortening in a large bowl with an electric mixer until smooth. Beat in eggs one at a time, mixing well after each addition. Stir in pumpkin and vanilla until well blended. Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a separate bowl; stir into pumpkin mixture until well mixed. Stir in chocolate chips and nuts until evenly distributed. Drop dough by teaspoonfuls onto the prepared cookie sheets.

Bake in the preheated oven until the edges begin to brown, 12 to 15 minutes. Allow to cool for a few minutes on the baking sheets before removing cookies to wire racks to cool completely.
