  1. 1 Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain. When potatoes are cool enough to handle, peel and cut into 1/2-inch cubes.
  2. 2 Add potatoes, eggs, mayo, mustard, onion and celery to a bowl and stir until well combined. Chill at least 1 hour prior to serving.
