2 firms green mangoes - peeled
, pitted, and cut into matchsticks
0.25 purples onion
, thinly sliced
0.25 reds bell pepper
, thinly sliced
3 sprigs cilantro
, or more to taste, leaves removed and stems discarded
2 tablespoons lime juice
2 tablespoons fish sauce
1 tablespoon brown sugar
1 tablespoon crushed peanuts

Mix mangoes, onion, red bell pepper, and cilantro leaves together in a bowl.

Whisk lime juice, fish sauce, and brown sugar together in a separate bowl until the sugar is dissolved; pour over the mango mixture and toss to coat. Top salad with peanuts.
