This peach cheesecake is cool, creamy, and delicious! The no-bake filling is easy to make with peach preserves and cream cheese. It's wonderful topped with fresh peaches when they're at their best in the summer.

  1. 1 Gather all ingredients.
  2. 2 Beat cream cheese in a large bowl with an electric mixer until smooth. Gradually beat in confectioners' sugar until fully incorporated.
  3. 3 Add peach preserves and vanilla; beat until combined.
  4. 4 Fold in whipped topping until evenly incorporated and smooth.
  5. 5 Pour 1/2 of the cream cheese mixture into each graham cracker crust and spread evenly. Refrigerate until set, at least 1 hour.
  6. 6 Garnish the top of the cheesecake with fresh peach slices before serving.
