  1. 1 Combine zucchini and onion in a large bowl.
  2. 2 Mix together flour, cornmeal, salt, pepper, and garlic powder in a small bowl until well combined.
  3. 3 Pour flour mixture over zucchini mixture; cover the bowl and shake until vegetables are well coated. Let mixture sit until a batter forms on vegetables, about 30 minutes.
  4. 4 Heat oil in a medium skillet over medium heat. Fry vegetables in hot oil until golden brown, turning to cook evenly.
