If you like fried zucchini and squash, and you're like me, you're left with only half of what you fried when you get done frying. This is a simple and quick way to fry enough for everyone.
Ingredients
- 2 zucchini , quartered and sliced
- 1 onion , sliced into rings
- 0.5 cups all-purpose flour
- 0.5 cups cornmeal
- 0.5 teaspoons salt
- 0.5 teaspoons ground black pepper
- 0.25 teaspoons garlic powder
- 1 cup vegetable oil for frying

Combine zucchini and onion in a large bowl.

Mix together flour, cornmeal, salt, pepper, and garlic powder in a small bowl until well combined.

Pour flour mixture over zucchini mixture; cover the bowl and shake until vegetables are well coated. Let mixture sit until a batter forms on vegetables, about 30 minutes.

Heat oil in a medium skillet over medium heat. Fry vegetables in hot oil until golden brown, turning to cook evenly.
