I have been baking with Bob's Red Mill® organic whole wheat pastry flour for some time. I could never get my banana bread recipe right, until now. This is wonderful, easy, and best of all, I make it in my bread machine!

Ingredients

3 over-ripe bananas , mashed
2 eggs
3 tablespoons canola oil
1 teaspoon ground cinnamon
2 cups whole wheat pastry flour
1 cup chopped walnuts
0.5 cups dark chocolate chunks , Optional
0.75 cups white sugar
1 teaspoon baking powder
0.5 teaspoons baking soda
0.5 teaspoons vanilla extract

Instructions

1 Combine bananas, eggs, canola oil, and cinnamon in a bread machine; add flour, walnuts, chocolate, sugar, baking powder, baking soda, and vanilla extract.
2 Follow manufacturer's instructions for 'quick bread' setting.
