I have been baking with Bob's Red Mill® organic whole wheat pastry flour for some time. I could never get my banana bread recipe right, until now. This is wonderful, easy, and best of all, I make it in my bread machine!
Ingredients
- 3 over-ripe bananas , mashed
- 2 eggs
- 3 tablespoons canola oil
- 1 teaspoon ground cinnamon
- 2 cups whole wheat pastry flour
- 1 cup chopped walnuts
- 0.5 cups dark chocolate chunks , Optional
- 0.75 cups white sugar
- 1 teaspoon baking powder
- 0.5 teaspoons baking soda
- 0.5 teaspoons vanilla extract

Combine bananas, eggs, canola oil, and cinnamon in a bread machine; add flour, walnuts, chocolate, sugar, baking powder, baking soda, and vanilla extract.

Follow manufacturer's instructions for 'quick bread' setting.
