This is a yummy pumpkin chip muffin recipe that has become an annual tradition, especially for fall and Halloween class parties. Especially tasty when they are still warm, these pumpkin muffins are full to the brim with chocolate chips!

  1. 1 Preheat oven to 400 degrees F (200 degrees C). Grease two 12-cup muffin tins or line cups with paper liners.
  2. 2 Beat eggs in a large bowl: mix in sugar, pumpkin, and oil.
  3. 3 Mix flour, baking soda, baking powder, ground cinnamon, and salt in a medium bowl. Add to pumpkin mixture: fold in chocolate chips.
  4. 4 Spoon batter into the prepared muffin cups, filling to the top.
  5. 5 Bake in the preheated oven until a toothpick inserted in the center comes out clean, 15 to 20 minutes. Cool in the tins for 5 minutes. Transfer to a wire rack to cool completely.
