  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Grease baking sheets.
  2. 2 Beat brown sugar and shortening with an electric mixer in a large bowl until smooth. Beat egg and vanilla until fluffy. Stir in pumpkin. Add flour, pumpkin pie spice, baking soda, 1 teaspoon cinnamon, and salt together in a bowl; stir into pumpkin mixture. Fold in raisins and walnuts.
  3. 3 Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.
  4. 4 Bake in the preheated oven until edges are golden, 10 to 12 minutes
  5. 5 Meanwhile, mix confectioners' sugar and warm water together until smooth. Stir in ½ teaspoon of cinnamon.
  6. 6 Brush cookies with spice glaze. Cool on wire racks.
