Cherry Tomato Bites
Fresh, unbaked bites that remind you of a BLT. Quick, easy, and cheap, if you grow your own tomatoes. This can be made a day ahead if tomatoes were drained. Perfect for a picnic.
Crispy Zucchini or Pumpkin Blossoms
My Italian grandmother makes these every year when the zucchini in her garden start to blossom. She is Sicilian and calls them "cripelli." It's sort of like a fritter and so yummy. As an alternative, you could also chop up the blossoms and mix them up in the batter and drop by teaspoons into the hot oil.
Cherry Tomato Pasta
I love to make cherry tomato pasta with roasted cherry tomatoes to enhance the flavor of the sauce and add a wonderful, rich sweetness. Fresh herbs, a touch of heat from red pepper flakes, and some ricotta smooths it all out.
