Ingredients

• 1 medium apple - peeled , cored and shredded
• 0.5 cups shredded Cheddar cheese
• 0.5 cups applesauce
• 2 large eggs
• 1 tablespoon olive oil
• 1 cup whole wheat flour
• 1 cup rolled oats
• 1 teaspoon baking powder

Instructions

1. 1 Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin pan with paper liners.
2. 2 Mix together apple, cheese, applesauce, eggs and olive oil in a bowl. Combine whole wheat flour, oats, and baking powder in a separate bowl; stir by hand into the wet ingredients until well blended. Spoon into the prepared muffin cups.
3. 3 Bake for 15 minutes in the preheated oven, or until the tops of the muffins spring back when lightly pressed. Cool completely before serving.
