Rhubarb Butter Crunch

This recipe was passed down through my mother-in-law's family and it is the best rhubarb butter crunch ever! Serve with either ice cream or whipped cream. I have left the directions as she gave me, as it adds a touch of character to the recipe.

  1. 1 Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  2. 2 Combine rhubarb, white sugar, and 3 tablespoons flour in a large bowl; spread onto the prepared baking sheet.
  3. 3 Combine 1 ½ cups flour, brown sugar, butter, and oats in a medium bowl; sprinkle over rhubarb mixture.
  4. 4 Bake in the preheated oven until browned and crunchy, 35 to 40 minutes.
