This recipe was passed down through my mother-in-law's family and it is the best rhubarb butter crunch ever! Serve with either ice cream or whipped cream. I have left the directions as she gave me, as it adds a touch of character to the recipe.
Ingredients
- 8 cups diced rhubarb
- 1 cup white sugar
- 3 tablespoons all-purpose flour
- 1.5 cups all-purpose flour
- 1 cup brown sugar
- 1 cup butter , softened
- 0.75 cups rolled oats

Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet.

Combine rhubarb, white sugar, and 3 tablespoons flour in a large bowl; spread onto the prepared baking sheet.

Combine 1 ½ cups flour, brown sugar, butter, and oats in a medium bowl; sprinkle over rhubarb mixture.

Bake in the preheated oven until browned and crunchy, 35 to 40 minutes.
