  1. 1 Gather all ingredients.
  2. 2 For sizzle sauce, stir mayonnaise and chili crisp together in a small bowl; set aside.
  3. 3 Season eggs with salt and pepper. Heat a dry, nonstick skillet over medium-high heat. Add 1 rice wrapper to the skillet.
  4. 4 Pour half the eggs over wrapper, then use a spoon to spread egg to the edges of the wrapper.
  5. 5 Sprinkle egg with half of green onion, half of cilantro, and half of prosciutto. Sprinkle on half of cheese, then drizzle with half of sizzle sauce.
  6. 6 Cook until egg is set and cheese is melted. Edges of wrapper may crisp up and brown slightly.
  7. 7 Slide onto a plate and cut into wedges or fold like a taco . Repeat with remaining ingredients. Enjoy!
