These oven-baked hash browns are perfect for breakfast or as a side dish for dinner. This is a basic recipe, but feel free to include add-ins, such as different cheeses, eggs, bell peppers, chives, or a variety of herbs and spices to change up the flavor. And as a bonus, you can cook your bacon in the oven at the same time, just not as long. Leftover hash browns can be stored in an airtight container in the fridge or frozen in a zip-top plastic bag.

  1. 1 Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil and coat generously with cooking spray.
  2. 2 Add potatoes and onion to a large bowl and stir well. Drizzle with oil and stir until potatoes are coated. Sprinkle with garlic powder, paprika, salt, and pepper, tossing to combine. Distribute potatoes evenly on the prepared baking sheet; do not pack down.
