Strawberry Churro Roll Ups

These strawberry churro roll ups are the best. They are like a fancy version of a French toast stick, but much easier to make and just as tasty. Serve with strawberry syrup for dipping.

  1. 1 Gather all ingredients.
  2. 2 Trim crusts from bread and flatten each slice with a rolling pin until about 1/8-inch thick.
  3. 3 Place 1 1/2 teaspoons of cream cheese and 1 teaspoon of jelly on one bread slice in a straight line about 1-inch away from one side of the bread.
  4. 4 Starting with the side closest to the filling, roll the bread up and set aside, seam side down. Repeat with remaining bread, cream cheese, and jelly.
  5. 5 In a shallow bowl whisk together eggs and milk. In another shallow bowl combine sugar and cinnamon.
  6. 6 Melt 1 tablespoon of the butter in a 12-inch nonstick skillet over low heat, Coat bread rolls in egg mixture. Place 6 roll-ups in skillet, seam side down and cook until golden brown on all sides, turning occasionally, 4 to 5 minutes. Repeat with remaining butter and roll-ups.
  7. 7 Transfer warm roll-ups to cinnamon-sugar mixture and roll to coat.
  8. 8 Serve with strawberry syrup, if desired.
