Sugar-Free Peach and Banana Cobbler

This sugar-free peach and banana cobbler is my own creation. It's a good recipe for diabetics but can easily be made as a non-diabetic dessert by using real sugar instead of a sugar substitute. It's not super sweet, allowing the natural sweetness of the fruit to come through.

  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  2. 2 Mix peaches, bananas, 2 tablespoons flour, and 1 teaspoon sugar substitute together in a large bowl until fruit is evenly coated; spread into the bottom of the prepared baking dish.
  3. 3 Whisk 1 cup flour, baking powder, salt, and cinnamon in the same large bowl. Stir in skim milk, egg, corn oil, remaining 2 teaspoons sugar substitute, and vanilla until well combined. Pour batter in an even layer over fruit.
  4. 4 Bake in the preheated oven until cobbler is golden brown and a toothpick inserted into the middle comes out clean, about 30 minutes. Remove to a wire rack and cool for at least 20 minutes before serving.
