This is the perfect go-to dish for potlucks. It's so quick and easy to make, and actually better made ahead, because it does need a few hours to chill. It has a good balance of sweet to tart, and is a good side dish for most entrees.

  1. 1 Combine kidney beans, celery, and red onion in a large bowl.
  2. 2 Whisk thoroughly red wine vinegar, olive oil, sugar, salt, and pepper. Pour dressing over bean mixture, and stir until well combined.
  3. 3 Cover and chill in the refrigerator for at least 4 hours or overnight.
