  1. 1 Drain pickles and slice into 1/4-inch pieces. Place in a medium bowl with 2 cups sugar. Stir, cover, and allow to stand at room temperature for 8 hours to overnight.
  2. 2 Mix remaining 2 cups sugar, vinegar, water, and pickling spice together in a medium saucepan. Bring to a boil. Pour over pickles. Allow to stand at room temperature for 8 hours to overnight.
  3. 3 Transfer pickles to sterile jars and store in the refrigerator. Serve chilled.
