Pumpkin Swirl Bread
This is for a pumpkin quick bread that has cream cheese in the middle. I generally double it, and then it makes three 8 X 4 inch loaves. This recipe freezes well.
Beef Asado
This Filipino beef asado recipe is rich in flavor due to the slow cooking of the beef with all of the ingredients. You can cook the meat until tender the day before to make skimming the fat easier. Do not use a pressure cooker for this dish. This recipe is very versatile — serve it with rice, bread, or boiled potatoes.
Easy Lentil Soup
My mom made this tomato lentil soup often when I was growing up, and I continued to make it for myself in college. As a busy college student, I don't have much time to eat, let alone cook. This soup is quick and easy to make, and it's incredibly good for you. Even though it's delicious, it's a little dull in color — make it more appealing by garnishing it with freshly chopped parsley or chives and a lemon slice!
