These vegetarian nachos are very satisfying and crave-worthy! My husband (the recipe creator) uses refried beans, jalapeño salsa, and pepper Jack cheese, but you can add your favorite toppings or whatever you like. Also good topped with sliced pepperoncini or diced jalapeño.

Ingredients

  • 2 cans fat-free refried beans , 15 ounce
  • 1 can jalapeño salsa , 7.75 ounce
  • 1 bag tortilla chips , 12 ounce
  • 1 package shredded pepper Jack cheese , 8 ounce
  • 1 green bell pepper , chopped
  • 1 onion , chopped
  • 1 package shredded lettuce , 8 ounce
  • 1 can sliced black olives , 4 ounce

Instructions

  1. 1

Gather all ingredients. Preheat the oven broiler. Set an oven rack about 6 inches from the heat source. Line a rimmed baking sheet with aluminum foil.

  2. 2

Combine refried beans and salsa in a saucepan over medium heat; cook and stir until blended and heated through, about 5 minutes.

  3. 3

Arrange tortilla chips on the prepared baking sheet. Spoon refried bean mixture over chips. Sprinkle with pepper Jack cheese, green bell pepper, and onion.

  4. 4

Cook under the preheated broiler until cheese is melted, 3 to 5 minutes. Garnish with lettuce and olives.
