I was surprised how quickly this air-fryer chicken katsu came together! Using a purchased tonkatsu or barbecue sauce makes this easy, too! It's great for an after-school snack, or for a main dish for 2 or 3. The Japanese panko crumb crust is crunchy and satisfying, and it's real food!
Ingredients
- 1 large egg
- salt to taste
- 1 cup panko bread crumbs
- 0.75 pounds chicken breast cutlets
- avocado oil cooking spray
- 1 tablespoon barbecue sauce , Optional
- 1 tablespoon chopped green onions , Optional
Instructions
-
1
Preheat an air fryer to 400 degrees F (200 degrees C) according to the manufacturer's recommendations.
-
2
Beat egg and salt lightly in a shallow bowl or a small casserole dish. Place panko bread crumbs on a plate.
-
3
Dip each cutlet into egg mixture, allowing excess to drip back into the bowl. Turn cutlets in panko bread crumbs so both sides are coated well, pressing the cutlets gently into the crumbs. Set on a piece of parchment paper. Spray each side with cooking spray and place in the basket of the air fryer.
-
4
Air-fry for 5 minutes, turn, and air-fry for an additional 4 minutes. Serve with barbecue sauce and garnish with green onions.

Sicilian Christmas Pizza (Sfincione)
Topping a thick-crust pizza with bread crumbs might sound like a strange idea, but it really is the crispy, cheesy secret sauce behind this Sicilian Christmas Pizza. Well, that and the actual sauce of onion and anchovies — ingredients you might want to keep secret from guests. Also key is the extremely sticky dough, which bakes into a feather-light, spongy crust that contrasts perfectly with the crumbly topping. Garnish with the customary dried oregano if desired.
Ham and Beans and More
Ham and bean soup can be a little bland and requires a lot of salt to be palatable, but not so with this version. It is bursting with flavor.
Almond Pork
This pork recipe is a staple in our house. It is easy to prepare and is quite tasty! I like to serve this dish with steamed broccoli with hollandaise sauce.
