If you've never started from raw and roasted your own cashews, you are in for a treat. Roasting them in the air fryer makes it a cinch and the golden brown pop in your mouth is nothing like you'll ever get from a can.

- 1 tablespoon olive oil
- 0.5 teaspoons lemon-pepper seasoning
- 0.5 teaspoons garlic powder
- 0.5 teaspoons salt

Passover Lasagna
This recipe uses matzah sheets instead of lasagna noodles. Delicious, and it's easy to take the leftovers for lunch the next day (unlike dry matzah for sandwiches!) As an option, add cooked spinach, mushrooms, onions, or peppers.
Hearty Vegetarian Shepherd's Pie
This meatless comfort food is packed with high-antioxidant vegetables, plus curry's anti-cancer curcumin.
Spicy Lamb Patties
I was forced to create these when my favorite brand stopped making their lamb meatballs, which were a staple in my little food-obsessed world. They're even more scrumptious with a small side of plain yogurt with some mint and cumin stirred into it. Add rice or couscous and a green salad and you have a tasty, easy, somewhat elegant dinner! This recipe can also be used to make meatballs for frying, if you prefer.
