This avocado salad is a delicious combination of ripe avocados, sweet onions, fresh tomatoes, and cilantro. This recipe is so easy to make and very colorful — I think you'll like it!
Ingredients
- 2 ripes avocados - peeled , pitted and diced
- 1 sweet onion , chopped
- 1 green bell pepper , chopped
- 1 large ripe tomato , chopped
- 0.25 cups chopped fresh cilantro
- ½ lime , juiced
- salt and pepper to taste

This is a twist on Playgroup Granola Bars from this site. I didn't have the stuff to make those (and we love those), so I did my own thing. They turned out great! We normally wrap them individually and freeze them, a great quick snack or breakfast on-the-go!
