Cooking scallops in the oven takes no time at all. For this recipe, large sea scallops are combined with garlic, shallots, butter, then topped with bread crumbs and baked to perfection. Being from Maine, we love our seafood, and this recipe is one of our favorites.
Ingredients
- 16 seas scallops , rinsed and drained
- 5 tablespoons butter , melted
- 5 cloves garlic , minced
- 2 shallots , chopped
- 3 pinches ground nutmeg
- salt and pepper to taste
- 1 cup bread crumbs
- 4 tablespoons olive oil
- 0.25 cups chopped parsley
- lemon wedges for garnish

Gather all ingredients.

Preheat the oven to 425 degrees F (220 degrees C).

Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.

Combine bread crumbs and olive oil in a separate bowl. Sprinkle on top of scallops.

Bake in the preheated oven until crumbs are brown and scallops are done, 11 to 14 minutes. Top with parsley, and serve with lemon wedges on the side.

Roasted Corn Chowder
Roasted fresh corn and potato chowder is hard to beat on a chilly day. For a twist, add just a few ounces of smoked salmon and have an incredible British Columbia-inspired smoked salmon corn chowder. Had this in a little cafe on a dock in Vancouver, BC, while waiting for a sea plane to take me to the outer west coast of Vancouver Island for a late season salmon fishing trip. I spent several years playing around with it to recreate it. I don't know if I matched it exactly, but I have come up with this basic roasted corn chowder recipe that turns into a great smoked salmon chowder.
Vanilla Cream or Sauce
This is really delicious on its own, but I use it mainly to serve alongside brownies, bread pudding, apple pie, berries, or poached pears. You can either make this as a thicker cream or as a sauce. I love it as a cream for berries, poached pears or brownies and as a sauce over apple pie or bread pudding. Serve chilled over warm or cool desserts or just eat it on its own as a custard.
Easy Corn and Crab Chowder
This simple yet flavorful corn and crab chowder can be prepared in a jiffy. A chicken curry variation is just as easy and tasty. Leftovers make a great casserole or au gratin the next day.
