Micheladas with Tajin
Micheladas came from the words 'mi chela helada' which translates into 'my cold beer'. Micheladas originated in Mexico and now there are many different recipes. Dark beer, normally XX Cerveza is the norm in Mexico, but you can use any beer you like. This is a basic recipe with optional add-ons. With or without them, Micheladas are delicious. Garnish with a tamarind candy straw and additional lime wedges.
Oatmeal Almond Butter Bites
These soft almond butter balls are a healthy, high-fiber snack. Made with chia seeds, ground flax, unsweetened coconut, and oats, they're easy to mix up in the stand mixer or by hand. Store balls in an airtight container in the refrigerator.
Moist Coconut Cake
This coconut cake recipe is soooo good! It makes a really moist cake with lots of coconut flavor. I take it to work and it disappears fast. I bake it in a Bundt pan but you can bake it in two 9-inch cake pans and layer it with your favorite frosting and flaked coconut.
