BJ's easy blackberry cobbler recipe takes all the fuss out of making a cobbler and eliminates that doughy taste. Serve with whipped cream or ice cream, if you like, but it's tasty enough without!
Ingredients
- cooking spray
- 5 cups fresh blackberries
- 0.5 cups white sugar
- 2 tablespoons lemon juice
- 1 package lemon-poppy seed muffin mix , 14.5 ounce
- 0.33 cups milk
- 1 large egg
- 1 teaspoon ground cinnamon
- 1 cup brown sugar
- 0.5 cups butter , room temperature
Instructions
-
1
Preheat the oven to 375 degrees F (190 degrees C). Coat a 9x9-inch baking pan with cooking spray.
-
2
Spread blackberries in the prepared baking pan; sprinkle with white sugar and drizzle with lemon juice. Combine lemon-poppy seed muffin mix, milk, egg, and cinnamon in a bowl; stir until moist (it's okay to leave lumps in batter). Pour batter over blackberries.
-
3
Beat brown sugar and butter together in a bowl with an electric mixer on medium speed until mixture resembles coarse crumbs; spread over batter.
-
4
Bake in the preheated oven until topping is golden, and blackberries are bubbling, about 1 hour. Cool before serving, 20 minutes.
